| An avid leader in the sustainable movement, Executive Chef Peter Pahk creates extraordinary dishes which embody the principals of the sustainable foods movement. Simply look at the Royal Oak Restaurant menu and you’ll find it rich with local produce and poultry, USDA prime steaks, and sustainable seafood. Chef Pahk is a spokesman for the Monterey Bay Aquarium’s Seafood Watch program and a presenting chef for their Cooking for Solutions annual sustainable cuisine event. The practices of sustainable cuisine overflow to the golf course and grounds where a three bin recycling program includes composting and recycling throughout the resort and spa and guest rooms as well.
At the Grill at Silverado, our Sustainable Seafood night each Tuesday offers a 4 course meal for just $35.00 and currently features farm-raised abalone. Every Wednesday is Kobe Burger night where our juicy Kobe Burgers are only $10.00 each. Our International Night on Thursdays in October just finished highlighting the cuisine of Germany. November will center on Italian cuisine and again offer a 4 course meal for only $35.00. Every night from 4-6pm you can quench your thirst with a glass of draft beer and enjoy our featured appetizer together for just $9.
