French Onion Soup

French Onion Soup

1 Sachet:
4 bay leaves
24 black peppercorn
1 - 2 sprigs thyme
Wrap them in cheesecloth and tie with butcher string

Ingredients:
20 large yellow onion (slice ¼” with grain)
1 ½ cup unsalted butter
Kosher salt
½ cup flour
3 quarts Veal stock
Black pepper to taste
¼ cup Sherry vinegar
4 cups toasted croutons
12 slices Gruyere cheese

Directions
Melt butter in large stock pot over medium heat
Add onions and ¼ cup of salt
Stir onions and reduce to low heat
Cook slowly - about 11/2 hour
Stir in flour cook 3 minutes, add sachet and veal stock and simmer 1 hour
Season with salt, pepper and vinegar
Ladle soup into a French Onion bowl and top with croutons and two slices gruyere cheese
Place on sheet pan under broiler until cheese melts and browns!
