Peach Butter

Yield: 4 cups

5 pounds local peaches
1.5 cups sugar
2 teaspoon freshly squeezed Meyer lemon juice
Pinch of salt
Preheat the oven to 300 degrees

Cut peach in half and remove the pit. Puree them through a food mill or pulse on food processor until smooth. You should have about two quarts. Place in a thick bottom non-aluminum pan and stir in sugar, Meyer lemon juice and salt.

Bake the puree for 2.5 hours stirring every half hour. Transfer the peach butter to a smaller clean pot and bake another two hours.

Let the butter cool and serve mom some on her morning pancakes or better yet really good vanilla ice cream.
