Romantic Valentine’s Three-Course Dinner at Silverado’s The Grill

For a superb three-course Valentine’s dinner complete with a decadent amuse and romantic touches, the culinarians at The Grill will serve a multi-course meal with options. Created with the bounty of nearby farms, artisans and purveyors, the meal includes a half pour of Perrier Jouet Grand Brut and an etched Perrier Jouet flute on Valentine’s Day. Diners first savor Classic White Sturgeon Caviar with whipped crème fraîche on a housemade potato chip. The First Course offers either Ahi Tuna & Asian Pear Aguachile with pineapple, celery, serrano and shiso or Duck Liver Mousse served with black pepper gastrique, frisée, marcona almond and grilled sourdough. The choice of Entrées is Duo of Beef featuring a petit filet and short rib pavé accompanied by potato soubise, caramelized pearl onions and bordelaise; Seared Dayboat Scallops and Pork Belly with popcorn polenta, granny smith apple and balsamic syrup; or Truffle Potato Gnocchi prepared with melted leeks, foraged mushrooms and shallot agrodolce. To complete this delicious experience, Dessert selections are Dark Chocolate Tart served with whipped crémeux, pomegranate gelee and port reduction; Blood Orange Budino with whipped crème fraîche, almond granola and rose pearls; or Pastry Chef Devon’s Mignardises including truffles, petit fours and macarons. A limited A La Carte Menu will be offered, and a supplemental wine pairing will be available.

Valentine’s Specials at The Spa at Silverado Resort and Spa
Silverado’s full-service Spa is a lovely retreat for guests to relax, rejuvenate and connect with each other, while appreciating the beauty of the surrounding tranquil gardens and scenic views. Throughout February, The Spa’s 80-minute Wine & Roses Couples’ Massage will delight with two rose mud wraps and a couples’ candle massage. On Monday, February 13, from 5 to 6 p.m., resort guests are invited to open their heart chakra with Meditation Led by Judith Caldwell as they are surrounded by light to be transformed and healed from within. On Valentine’s Day, The Spa appointment guests will be offered a glass of sparkling wine with a 50-minute service.

Partners’ Lessons for Couples Who Play Together
Silverado has two PGA championship golf courses and nine freshly refinished tennis courts with top-notch instructors. Throughout February Silverado offers special golf and tennis lessons for active couples who want to learn to finesse their games together.

NAPA, Calif. – Silverado Resort and Spa, a luxury resort in the heart of Napa Valley wine country, has named Coleen Reardon its new director of marketing. Prior to joining Silverado Resort, Reardon was with Deer Valley Resort in Park City, Utah.
According to Todd Shallan, vice president and managing director of Silverado Resort and Spa, Reardon oversees all marketing initiatives – including branding, strategic planning, sponsorships, public relations, social media, content creation, web, digital and mobile platforms – for the iconic destination resort, which is home to the PGA Tour Fortinet Championship.
“We are thrilled to have Coleen join our team,” said Shallan. “Her expertise will be invaluable as we focus on enhancing this landmark property and positioning it as Napa Valley’s premier destination with dynamic programming, innovative technology and fresh design.”
Prior to joining the team at Silverado Resort and Spa, Reardon was Deer Valley Resort’s vice president of marketing. A member of the resort’s senior leadership team, she worked at Deer Valley for 28 years, climbing the corporate ranks from communications manager to vice president of marketing – a role in which, in addition to marketing initiatives, she oversaw the resort’s events department, monitoring coordination and production when Deer Valley was a venue for the 2002 Olympic Winter Games.
Reardon was previously a member of Ski Utah’s marketing committee and the Park City Chamber and Visitors Bureau’s (PCCVB) board of directors, executive committee and marketing council. She also served on the Utah advisory board for the Sundance Film Festival and currently serves on the Wasatch Back Committee Hospital Board for Intermountain Health Care’s Park City and Heber Valley hospitals. She is a past board member for the former Summit Institute, which was a Park City-based non-profit arts and humanities organization and served on the executive committee of the Park City Jazz Foundation. In 2011, she was awarded “Businesswoman of the Year” by the Park City Women’s Business Network and in 2012 received a Utah Business SAMMY award.

NAPA, Calif. (September 28, 2022) – Silverado Resort and Spa, a luxury resort in the heart of classic Napa Valley wine country, has announced culinary professional Patrick Prager will hold the new position of executive chef. Prior to joining the Silverado Resort family, Prager served as executive chef for Kimpton Hotels & Restaurants for the last five years based in Sacramento, California.
According to Todd Shallan, vice president and managing director of Silverado Resort and Spa, Prager will oversee daily operations of the resort’s dining program including in-room dining, signature American fare served at The Grill, offerings at the Mansion Bar, Silverado Market & Bakery and Boost Café, and customized on-site catering for meetings, weddings and special occasions. Prager will be updating the menus at The Grill and other dining venues, as well as creating special menus for holidays and food and wine events – all celebrating the seasonal bounty of the region.
“We are pleased to have Patrick lead our culinary team. He was raised in Alameda and has over 20 years of distinguished cooking experience in Northern California. His kitchen talents, leadership skills and commitment to excelling in his position will be important to Silverado as we further strive to enhance this landmark property and make it a must-visit destination in Napa Valley.”
Previously Prager served as executive chef for Kimpton Hotels & Restaurants and was a chef for Paragary Restaurant Group, both based in Sacramento. He has also worked with Marriott Hotels. Earlier in his career, he had the opportunity to chef at former iconic The Cliff House in the San Francisco Bay area and in historic downtown Sacramento at The Citizen Hotel. Early on in Prager’s hospitality career he had the opportunity to work and learn from some of the country’s leading chefs including Wolfgang Puck, Bradley Ogden, Michael Mina, George Morrone and Traci Des Jardins.
In his free time, Prager enjoys bike riding on both mountain terrains and on the road. He also loves painting, spending time with his family, eating great food and connecting with friends.

Iconic Resort Hosts PGA Tournament for Ninth Consecutive Year
NAPA VALLEY, Calif. (September 2, 2022) – Silverado Resort and Spa, a luxury landmark resort in the heart of Napa Valley wine country, is proud to team up with Fortinet, an American cybersecurity company with a global footprint, to host the Fortinet Championship, September 15 to 18, 2022 – the inaugural event of the 2022-23 PGA Tour season.
According to Todd Shallan, vice president and managing director of Silverado Resort and Spa, the resort is hosting the prestigious PGA tournament for the ninth consecutive year. “We are thrilled to once again host this acclaimed annual tournament, which this year is drawing 156 of the world’s top golfing legends, among them defending champion Max Homa, Gary Woodland and Rickie Fowler.”
The tournament will tee off on Silverado’s 72-par, 18-hole North Course, which originally opened in 1955. Later redesigned by Robert Trent Jones Jr, the course was also refreshed by PGA Hall-of-Famer and former Silverado Resort and Spa owner, Johnny Miller.
According to Cody Sherill, Silverado’s director of club operations, with its oak-lined fairways, dozens of water crossings and notable elevation changes, the challenging yet picturesque 6,793-yard North Course makes the ideal tournament setting. “Situated amidst the rolling hills of wine country, our North course was named the 2022 Regional Golf Course of the Year (Region 4) by the National Golf Course Owners Association, and also achieved Golfweek’s Best 2020: Top 200 Resort Courses ranking. We are proud to say that some of golf’s greatest champions – from legends Arnold Palmer, Jack Nicklaus and Lee Trevino to recent champions Jon Rahm, Rory McIlroy, Jordan Speith, Justin Thomas and Tony Finau – have walked these fairways.”
In addition to great golf and the world’s top players, the event will provide fans with an authentic Napa experience, featuring the best of Napa Valley food, wine and top-notch musicians. The Fortinet Championship Concert Series will be held on Silverado’s South course immediately following completion of play, Friday, September 16, and Saturday, September 17. Friday’s headliner is multi-platinum country music star Cole Swindell with special guest star Gavin DeGraw. Grammy nominated powerhouse OneRepublic with special guest X Ambassadors takes the stage on Saturday night. Concert admission is included in the cost of the daily ticket.

NGCOA Selects Napa Valley Resort as the Best in the West
NAPA, Calif. – Silverado Resort and Spa, a luxurious landmark resort in the heart of Napa Valley, was recently named the “Regional Golf Course of the Year (Region 4)” by the National Golf Course Owners Association (NGCOA). Silverado accepted this award at the 2022 Golf Business Conference late last month in Orlando, Florida. According to NGCOA, the award recognizes “a golf course that epitomizes exceptional course quality and management excellence, while making important contributions to their communities and the game.”
“We are thrilled to receive this honor from the NGCOA, and we’re very humbled to be listed alongside the other outstanding regional winners from across the country,” said Cody Sherrill Silverado Resort and Spa’s director of club operations.

IRVINE, Calif. (February 1, 2022) – Adding to its growing portfolio of iconic properties, KSL Resorts has taken over the day-to-day management of Silverado Resort and Spa, a luxury resort in the heart of Napa Valley wine country and announces Todd Shallan as the resort’s new managing director.
A California landmark for more than 150 years, Silverado’s genesis was as a private estate and is now a contemporary resort with 449 guest rooms and suites, two Robert Trent Jones designed championship golf courses, a 16,000-square-foot spa and fitness center and 70,000 square feet of indoor and outdoor event space.

Silverado offers nearly endless opportunities to enjoy oneself, so many, in fact, that it's a challenge to fit in all your first choices during a weekend visit. No matter how much of an adventurer you are, allow yourself downtime to relax and recharge. Before you set off to explore Napa and visit as many wineries as you can possibly imagine, a massage is in order to assure post-workout stamina.
If your ideal message leaves you with a sense of calmness and balance, then the Seven Chakra Balancing Massage is for you. The sound bath from a Tibetan singing bowl and massage with seven unique aromatherapy oils for the seven chakras (energy centers) will leave you empowered by a newfound sense of tranquility. However, if you are looking for a more vigorous treatment, try the Hawaiian Lomi Lomi a rhythmic full-body massage with continuous flowing strokes. This will take the edge off any fitness buff's competitive spirit and let you slow down and get ready to taste the wine. After all, there are 400 wineries in nearby Napa Valley.
Of course, if you're never one to miss a meal, grab a signature Silverado snack on the golf course, a BurgerdogTM, basically a hot dog-shaped hamburger topped with favorite condiments and cheese. Such caloric indulgences may not be for everyone so consider a salad out- doors at the hotel's restaurant, The Grill as a healthy alternative. Of course, it is up to you if you want to pass up tempting variations like a classic Calfornia Cobb, in favor of the farm salad with garden-grown lettuce and market vegetables topped with pistachios and Grana Padano Cheese. So fresh and crunchy, you'll be inspired to tackle the nearby wineries with a renewed vitality.
A quick dip in the main pool is a great way to revitalize before cocktails and dinner at The Grill. Silverado's healthy environment is perfect for the fitness-buff who is certainly dedicated to staying in shape but is not going to pass up fine wine and great food. Musts on the dinner menu? Try the Crispy Skin Ora King Salmon, the salmon equivalent of Wagyu Beef, with pine-nut relish as sweet as it was savory. But if you're craving Mexican, opt for Pablo's Pollo Loco, a dish that enhances humanely-raised Mary's Organic Chicken with the flavor of cilantro and stuffed Anaheim peppers. Silverado's Chef de Cuisine is Pablo Jacinto, a gregarious fellow who has partnered with the best among Napa's gourmet restaurant scene. Pablo strives to infuse American cuisine with the excitement of Latin American flavor, and so he does on the Silverado menu with much-appreciated flair.
When happy hour arrives, it's time to indulge in a Toasted Walnut Old Fashioned before dinner. Enjoying this locally-inspired cocktail with Nocello Walnut liqueur (homage to the Walnut trees native to California since 1770) outdoors on the patio is the perfect way to watch the sun slide deep into the vineyards. Silverado's Sommelier's selection of truly excellent California wines is intriguing, however, if you're limiting yourself to just a glass or imbibing a bottle among friends, it's a sure thing to choose a Cabernet Sauvignon, a favorite on the wine list? Napa's own William Hill.

KATHLEEN REYNOLDSThe folks at Silverado Resort and Spa want Napa Valley residents to know that the facility is open to everyone to enjoy for day use, not just club members or resort guests.
Most locals are familiar with the white-columned mansion at 1600 Atlas Peak Road, which was built in 1870. The resort encompasses 300 acres, has 117 guest rooms and 228 suites. It features three swimming pools, golf, tennis and daily fitness classes.
Silverado Resort and Spa is Napa Valley’s only 36-hole golf resort and was named the Regional Golf Course of the Year 2022 by the National Golf Course Owners Association.
According to a press release by the association, the award recognizes “golf courses that epitomize exceptional course quality and management excellence, make important contributions to their communities and the game, and are models of operations to its peers.”
It is the only golf facility west of the Mississippi to be so honored. In 2021, the North Course was named to “Golfweek’s” Top 200 Resort Courses and TripAdvisor’s Travelers’ Choice Award.
“Silverado has hosted many professional golf events over the years, and we are proud to currently host the PGA Fortinet Championship,” said Cody Sherrill, director of golf operations, in an email. “It’s been special to be part of the economic impact (the championship) has for Napa Valley, along with the fun-filled week of entertainment.”
“While many golfers are excited about playing where the pros play on the North Course, we get more compliments about the character of the South Course. In addition to that, we provide a space for our local high school golf teams to practice during their spring and fall seasons, and we continue to provide more opportunities for youth to be introduced to the game.”
Sherrill said that golf lessons and summer golf tennis swim camps are available to the public, although priority is given to resort guests and members. There are reduced golf greens fees during twilight hours, currently starting at 3 p.m.
Silverado Resort has 10 Plexipave tennis courts and for four consecutive years, Tennis Resorts Online named Silverado one of the Top 14 Tennis Resort Destinations in the World.
There are three instructors including the director of tennis, Katie Dellich, who was named one of the 2021 Top 50 Best Coaches in America by The Tennis Channel. She said that, while the courts are reserved for members and guests, tennis clinics and camps are open to the public, pending space availability.
For someone starting or returning to the game, Dellich said, “We love beginners and love it when we can help grow the sport as well. The best and most fun way to get back into or started is with our Beginner Boot Camp Aug. 8 through 10. We go over the fundamentals for all the shots, court etiquette and basics of match play. A Wilson racquet tech comes to allow participants to try the latest in racquet technology. Of course, we also sip and sample Napa Valley wine.”
The Spa at Silverado has a 16,000-square-foot full-service spa. Along with 16 treatment rooms, the spa has private men’s and women’s lounges with outdoor whirlpools, a shared spa pool and a hair and nail salon. Fitness facilities in the spa includes cardiovascular equipment, free weights and over 30 classes each week. Inside the spa, Boost Café offers healthy fare such as smoothies, fruit juices and salads.
Spa director Suzy Bordeaux-Johlfs addressed the biggest misconceptions about the facility, that it is private.
“The Spa at Silverado is open to the public; it is not a private facility only available to Silverado members. The spa pool and fitness area are available to enjoy when a guest books a service at the spa (and that) spa day passes can be purchased, based on availability, by calling The Spa at Silverado at 707-257-5555.”
Before weddings at Silverado, the salon can be busy with bridal parties.
Bordeaux-Johlfs added: “We see a lot of girlfriend getaways, either for the day or a multi-day visit.
“The Silverado Relaxation Massage is our most popular treatment. It’s a relaxing Swedish massage that uses aromatherapy oils with healing properties to help replenish and relax the body and soul.”
Silverado has several casual dining options.
Located in the Mansion, The Grill overlooks the practice putting area and North course. Chef Pablo Jacinto serves up California-style cooking using many Napa-grown ingredients. Diners can choose indoor or outdoor seating.
Close to the tennis courts, the Silverado Market & Bakery has breakfast items, light lunches, snacks and coffee, wine and beer. Also located inside is Forno Pizza, offering fresh pizzas that come directly from the adjoining wood-fired grill. Food from both may be enjoyed at the connected outdoor terrace.
Many in the Napa Valley have attended weddings or functions held in Silverado’s meeting and event facilities. The Silverado Ballroom can hold 400 guests in its 5,160-square-foot space. The adjacent Fairway Deck faces the South Course’s 18th green. There are two mansion boardrooms and eight conference rooms. In addition, the resort has five outdoor spaces including the Mansion Gardens Pavilion to Fairway Vineyards, which can accommodate up to 1,000 guests.

The Courses
Silverado Resort offers two distinctive 18-hole, quality championship golf courses. A 7,166-yard North Course and a 6,612-yard South Course were both redesigned in 2010 by PGA Hall-of-Famer Johnny Miller. Both of these expertly maintained courses currently host or have hosted PGA tours and championships, with the North Course playing host every September to the PGA Tour Safeway Championship, and the South Course having hosted the PGA Champions Transamerica Tournament from 1989 through 2002. The Fortinet Championship PGA TOUR golf tournament is also slated to be hosted at Silverado in September of 2022.
Head Golf Professional Dave Zorn proudly points out that Silverado Resort works diligently to ensure that their courses are ready to play at tournament level year-round, so whether you play in summer or winter, conditions are always top-notch. Golfers here enjoy use of five different tee box options, so players of all skill levels can enjoy playing. There is also a full-length turf driving range, a large practice chipping green, a large practice putting green, and a private practice area. In addition to golf carts, push carts are available to those who wish to get their steps in.
Since their 2010 redesign, both courses continue to benefit from expert maintenance, careful grooming and thoughtful consideration, including minimizing Kikuya grass to allow Rye and Kentucky grasses to thrive, allowing for better turf conditions, and reshaped, revamped bunkers benefitting with the addition of brilliant white sand. Elevation changes and water crossings add exciting challenges to the game, and Oak-lined fairways, as well as surrounding rolling hills add to the natural beauty of the courses.
Our Favorite Hole
Although every hole on the course is well-designed and memorable, Hole #9 on the south course is the signature hole and the most fun to play. It is a Par 5, 462-yard hole, and tees off from an elevated tee well above the landing area.
Head Golf Professional Dave Zorn agrees that Hole #9 is a favorite among Silverado players. “A good tee shot in the fairway gives the player an option to lay up or to try and reach the guarded green in two,” he said. Zorn warns that although fun, the hole does present some exciting challenges. “Beware of the water left of the green and a bunker right with the green that runs towards the water. Two great shots leave the player with an eagle putt or a chipped a putt for a nice birdie.”
Zorn says that a delicious reward awaits players upon completion of hole #9. “After a fun hole is the world-famous Burger Dog Snack Shack.” (The Burgerdog is legendary in Napa Valley and beyond, featuring a hot-dog-length hamburger served in a hot dog bun, with all the delicious trimmings.)
The Most Challenging Holes
Although both south and north courses at Silverado are fun and playable for all skill levels, there are two holes that are considered very challenging to play, even by the most seasoned players. On the north course, the short par 4 8th hole is considered the most challenging hole, and on the south course, the par 4 6th hole is considered the most challenging to play, according to Zorn. He said of the 8th hole, “Any shot that ends up a short runs the risk of rolling all the way down the hill for a tough up-hill 30-40 yard wedge shot. A good shot on the green sets yourself up for a tough putt. Par is a great score on this hole.”
Describing the challenges of the south course 6th hole, Zorn said, “What makes this hole challenging is the second shot downhill to an elevated green. All short shots will run all the down the hill next to a plethora of divots from previous victims to coming up short and having a tough pitch shot back up the hill 20-30 yards. Escaping with a par on this hole feels like a birdie.”
Delectable Dining
In addition to pastries and coffee from The Silverado Market & Bakery, wood-fired pizza from Forno, and their famous Burgerdogs, golfers have the option for a more refined dining experience at The Grill.
Offering farm-to-table, seasonal cuisine for breakfast, lunch and dinner, The Grill offers diners a casual, yet upscale dining experience with both indoor and heated outdoor seating, and a variety of fresh, California-inspired dishes to choose from. Choose from classic Eggs Benedict, avocado toast or smoked salmon potato waffle, among other delicious options, for breakfast. The lunch menu offerings include a crab louie salad, Rueben Sandwich and shrimp tacos, and dinner selections include a seasonal risotto, duck confit, and butter-seared Petrale Sole. As expected in the heart of wine country, the restaurant features an excellent wine list, as well as craft cocktails and beer. The Grill also offers a Happy Hour menu, children’s menus, and a decadent weekend brunch.
Family and Junior Golf
Silverado Resort prides itself as a family friendly golf community, and true to their word, they host several camps throughout the year for junior players, as well as afternoon golf programs. The Troon Family Golf Program allows juniors to golf at no cost with a paying adult, after 3 pm.
There are also spring and summer golf, tennis and swim camps that emphasize the fun of the sport, as well as developing the skills and discipline needed to excel in golf and other activities.
Year-round group classes are also available, and low monthly fees for kids grouped in ages of 5-8, 8-11, and 8-13. The Johnny Miller Junior Golf Academy at Silverado Resort is a wonderful resource for both beginner and more skilled young players to develop and hone their golfing skills. One hour and 30-minute private lessons are also available to junior players.

HISTORY |
The history of Silverado Resort stretches back to 1870, when retired military general John Miller built the signature pillared white mansion on Atlas Peak Road. Named Lavergne, the distinctive home was designed in the French Italianate style with a mansard roof. General Miller, who became a U.S. senator in 1880, lived at the property until his death in 1886, and the property remained in his family for 63 years when it sold to Vesta Peak Maxwell, a Chicago aristocrat. In 1967, the Westgate Factors partnership opened the property as a golf resort. In 1984, Robert Meyer bought the resort for $20 million, selling it five years later to Isao Okawa of Tokyo, a venture capitalist and the former president and chairman of Sega Corp. In 2010, golfer Johnny Miller, Tim Wall, Roger Kent and their partners acquired the property. Previous owner Miller now remains at the resort as a consultant.
